Pumpkin bar recipe

Pumpkin Bars:
1 cup oil
2 cups sugar
2 cups pumpkin
4 eggs
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
2 tsp. cinnamon
Preheat oven to 350°F. Mix all ‘wet’ ingredients plus sugar together in a large mixing bowl until well combined. Add in all ‘dry’ ingredients except for flour. Combine. Slowly add in flour until mixed into a pale, orange batter. Grease a jelly roll pan, or a 10×15” rimmed sheet pan. Pour batter into the pan and spread until even across the entire surface. Place into oven and bake for 20-25 minutes. Leave to cool, then cut before frosting.
Frosting:
12 oz. cream cheese, softened
½ cup butter, softened
2 tsp. vanilla extract
Powdered sugar to taste
Combine all ingredients except powdered sugar into a large mixing bowl. Beat until smooth. Add powdered sugar slowly, tasting occasionally until desired sweetness.
